In Italian, "gelato" simply means "frozen". But behind this humble name lies an entire art form. This is the "DNA" that makes gelato unique compared with ice cream (industrial ice cream).

1. Fat Content: Less Is More

Industrial Ice Cream: Uses a great deal of heavy cream, with a high fat content (typically from 10-20%). This layer of fat coats the tongue, inadvertently reducing your ability to perceive flavour.

Italian Gelato: Uses more fresh milk and less heavy cream, so the fat content is only around 4-8%. With less fat, the flavours of the key ingredients such as strawberries, chocolate and hazelnuts... are not "covered up", becoming more intense, authentic and vibrant.

2. Air Content: The Secret to Its Dense, Creamy Texture
This is the factor that determines the texture. During production, air is mixed into the ice cream mixture (known as "overrun").

Industrial ice cream: Whipped at a very high speed, increasing the volume by mixing in a great deal of air (which can reach 50-100%). This creates a fluffy, airy, light texture that melts quickly.

Italian Gelato: Mixed at a much slower speed. This process introduces only a very small amount of air (around 20-35%). The result is a scoop of gelato that is dense, creamy, smooth and slower to melt, providing a full and satisfying experience when enjoyed.

3. Serving Temperature: The Key to Unlocking Your Taste Buds

Industrial ice cream: Stored and served at a very cold temperature (around -18°C to -22°C). This excessively cold temperature numbs your taste buds, making it difficult to fully appreciate the complexity of the flavours.

Italian Gelato: Served at a warmer temperature (around -12°C to -14°C). This ideal temperature fully releases the flavour without causing a "cold shock" to the tongue, allowing you to appreciate every delicate layer of flavour.

Natural colours: Gelato made with pistachios will be an earthy brownish green, not neon green. Gelato with mint will be off-white, not green.

Use a Spatula, not a round scoop: Gelato artisans gelato use a flat spatula to smooth and serve it, showcasing its creamy texture.
