Before You Begin – The Golden Rules of Homemade Italian Gelato
To create a batch of Italian gelato perfectly, you need to understand the fundamental principles that make it different. This is the core knowledge that will allow you not only to follow a recipe, but also to develop your own creations in the future.
Ingredients Are the Soul
The quality of a scoop of Italian gelato is determined from the moment you choose the ingredients. No technique can rescue poor-quality ingredients.
Milk and Cream: Choose pure pasteurised whole milk (unsweetened) and whipping cream with a high fat content (from 35-40%). These form the foundation of the gelato’s richness and texture.
Sugar: Sugar does more than add sweetness; it also prevents the mixture from freezing into ice. Using fine white granulated sugar will help it dissolve more easily.
Egg Yolks: A natural emulsifier that makes the gelato thicker, smoother and richer. Choose fresh hen’s eggs.
Flavour: This is your chance to shine! Use pure dark chocolate (70% cocoa or more), juicy fresh strawberries or quality pistachios. The flavour of delicious Italian gelato comes from these real ingredients, not artificial flavourings.
Understanding the “Science of Gelato” (The Simple Version)
As we shared in the article Gelato A-Z: The Complete Guide to Italian Gelato, the difference in Italian gelato comes down to 3 factors:
Less Fat: More milk and less cream than commercial ice cream.
Less Air: A slow churning and cooling process creates a dense, stretchy texture rather than a light, fluffy one.
A Warmer Temperature: Helps release the flavour more effectively.
When making it at home, we will recreate these principles by whisking the mixture at a moderate speed and repeating the process of alternating churning and freezing.
Essential Equipment – Your Powerful “Helpers”
You do not necessarily need a dedicated ice-cream maker, but the following equipment will make the process much easier and more successful:
Electric whisk: Extremely important for whisking the eggs and cream mixture.
Balloon whisk and spatula: Used to mix the ingredients gently.
Heavy-based saucepan: Helps distribute heat evenly and prevents the custard mixture from burning.
Fine-mesh sieve: For straining the mixture at the end, ensuring an exceptionally smooth texture.
Metal or glass bowl: Keeps things colder than a plastic bowl.
Ice-cream container/mould: A metal or glass container with a tightly sealed lid is recommended.
Recipe #1: Chocolate Italian Gelato – An Irresistible Bittersweet Flavour
Italian gelato with chocolate flavour is the perfect combination of the sweet, refreshing taste of gelato with a hint of gentle bitterness from pure chocolate, creating a deep and intense experience. A glass of Italian gelato with a delicious chocolate flavour will have a soft, smooth, stretchy texture that melts gently in the mouth.
Ingredients
4 egg yolks (choose fresh eggs)
140gr white granulated sugar
500ml unsweetened fresh milk
250ml whipping cream (35-40% fat)
200g dark chocolate (choose one containing at least 70% cocoa)
3ml vanilla essence (vanilla extract)
Method
Step 1: Whisking the Egg–Sugar Mixture (Tempering Base)
This is the most important foundational step. Add 4 egg yolks and 70gr sugar to a large bowl. Use an electric whisk on low speed to combine for approximately 30 seconds. Then increase the speed to medium-high and whisk continuously for 3-4 minutes. The mixture is ready when it turns pale yellow (off-white) and becomes thick and glossy. When you lift the whisk, the mixture should fall in a smooth ribbon and hold its shape for a few seconds before blending back into the rest.

Step 2: Cooking the Milk Custard Base (Custard)
Add 500ml fresh milk, 250ml cream and the remaining 70gr sugar to a heavy-based saucepan. Place over medium heat, stirring gently and evenly until the sugar has completely dissolved. Heat until the mixture is hot and steam is rising from the surface (approximately 80°C), but do not allow it to come to a full boil.

Step 3: “Temper” – Combining the Eggs and Hot Milk
This step requires care to prevent the eggs from cooking and curdling. Turn off the heat. Use a ladle to slowly scoop approximately 100ml of the hot milk mixture and pour it in a thin stream into the bowl of eggs, while continuing to whisk gently on low speed with the other hand. Repeat once more. This process gradually raises the temperature of the eggs. Then pour the entire warmed egg mixture back into the saucepan of milk.

Step 4: Finishing the Base Mixture
Return the saucepan to the hob on the lowest heat. Stir continuously and evenly with a flat spatula, scraping the bottom and sides of the pan, for approximately 6-8 minutes. The mixture will gradually thicken. To check, dip a spoon into the mixture, lift it out and run your finger horizontally across the back of the spoon. If the line remains clear and does not flow back together, the mixture is ready. Turn off the heat immediately.

Step 5: Combining with Chocolate
While cooking the cream base, finely chop 200gr dark chocolate and place it in another large bowl. As soon as the milk custard base is cooked, immediately pour it through a sieve into the bowl of chocolate. The heat from the cream will melt the chocolate. Leave it for approximately 1 minute, then stir from the centre outwards with a whisk until fully combined and smooth, with an even glossy brown colour. Add the vanilla extract and stir well.

Step 6: Rapid Cooling and Cold “Maturing”
For delicious, smooth gelato, the mixture needs to be cooled quickly. Prepare a large bowl of iced water, place the bowl of gelato in it and stir for a few minutes to lower the temperature. Then cover the surface tightly with cling film (ensuring the cling film touches the surface of the gelato to prevent a skin from forming), and place it in the fridge to “mature” for at least 4 hours, preferably overnight.

Step 7: Whisking and Repeated Freezing
This step mimics an ice cream maker. After chilling, remove the mixture. It will be very thick. Whisk on medium speed for approximately 5-7 minutes to loosen it and incorporate a little air.
Pour the mixture into a container, seal tightly and place in the freezer for 1 hour.
Remove it, then use a fork or spoon to scrape and mix the frozen gelato from the sides and bottom of the container into the centre. Whisk again for 2-3 minutes.
Repeat the 1-hour freezing and re-whisking process 2 more times. This helps break up large ice crystals, making your Italian gelato smoother.

Step 8: Finishing and Serving
After the final whisking, smooth the surface of the gelato, cover tightly and freeze for at least another 4-6 hours so that it can fully set. Before serving, leave the gelato at room temperature for 5-10 minutes to soften slightly, making it easier to scoop and more enjoyable to eat.

Recipe #2: Strawberry Italian Gelato – The Sweet Taste of Summer
Italian gelato with strawberries is the perfect combination of the strawberries’ sweet, refreshing tartness and the rich, alluring creaminess of gelato. Each spoonful melts in the mouth, offering a wonderful experience that awakens the senses in the midst of a sweltering summer.
Ingredients
450ml unsweetened fresh milk
225ml cream (whipping cream)
300gr fresh strawberries (choose ripe, juicy fruit)
170gr caster sugar
4 egg yolks
3ml vanilla essence
Method
Step 1: Preparing a Pure Strawberry Sauce
Wash the strawberries, remove the stalks and quarter them. Place the strawberries and approximately 50gr sugar in a small saucepan and cook over medium heat. The strawberries will gradually release their juice. Gently mash them with a spoon. Simmer gently for approximately 5-7 minutes until the mixture thickens into a sauce. Turn off the heat and leave to cool completely.

Step 2: Making the Egg Milk Custard Base
Follow steps 1, 2, 3 and 4 of the Italian gelato chocolate recipe, using 4 egg yolks, the remaining 120gr sugar, milk and cream. You will obtain a smooth egg milk custard base.

Step 3: Cooling the Gelato Base and Combining with the Strawberry Sauce
Rapidly cool the gelato base mixture in an ice bath. Once the mixture has cooled, add all the cooled strawberry sauce. Stir well with a whisk until combined and a beautiful milky pink colour is achieved.

Step 4: Cold “Maturing”, Whisking and Freezing
Follow steps 6, 7 and 8 of the Italian gelato chocolate recipe. “Mature” the mixture in the fridge for at least 4 hours, then repeat the whisking and freezing process 3 times for optimum smoothness.

Recipe #3: Pistachio Italian Gelato – A Premium Nutty Flavour
Italian gelato Pistachio gelato is a unique, refreshing dessert that combines the rich, nutty flavour of pistachios with the freshness and sweetness of gelato. When eating it, you will experience an indulgently creamy, nutty taste that is truly stimulating. In particular, its natural, attractive pastel green colour makes this gelato feel truly "premium".
Ingredients
500ml unsweetened fresh milk
250ml fresh cream (whipping cream)
150gr pistachios (shelled, unsalted)
140gr granulated sugar
4 egg yolks
A small amount of fragrant roasted pistachios, crushed, for decoration
Method
Step 1: Prepare the Pistachio Paste
Lightly roast the pistachios in a pan or oven at 160°C for 5-7 minutes until fragrant. Leave to cool. Add the pistachios and about 2 tablespoons of fresh milk (taken from the prepared 500ml) to a high-powered blender. Blend until the mixture becomes a smooth, fine paste.

Step 2: Make the Gelato Base and "Infuse" the Flavour
Follow steps 1, 2, 3 and 4 of the Italian gelato chocolate recipe to create the custard gelato base. Once the base is ready, immediately add the blended pistachio paste and stir until well combined.

Step 3: Strain, Chill and Finish
Pour the mixture through a sieve once more to remove any remaining lumps. Then follow steps 6, 7 and 8 of the Italian gelato chocolate recipe: chill rapidly, "infuse" in the fridge overnight, and repeat the churning-freezing process 3 times.

Troubleshooting
"Why is my gelato icy?"
The main cause is freezing too slowly or not breaking up the ice crystals sufficiently. Make sure your freezer is cold enough, and do not skip the step of taking the gelato out and churning it again several times.
"Why has my egg mixture curdled?"
You added the hot milk to the eggs too quickly or heated the gelato base over too high a heat. If it has only curdled slightly, you can rescue it by straining the mixture through a very fine sieve.
"Why isn't my gelato soft enough?"
It may be because the sugar or fat ratio is not right. Make sure you measure the main ingredients accurately.
