What is Sorbet? The difference between Sherbet and Sorbet

What is Sorbet?

Sorbet is a type of frozen dessert made from fruit, sugar and water. It contains no milk or fat, so it has a soft, smooth texture and is lighter than ice cream. However, what makes Sorbet special is its fresh and delicate fruit flavour. As it contains no milk or fat, Sorbet is often considered a healthier option and is suitable for people who are trying to follow a diet.

Sorbet is usually served as a dessert after a meal, but it can also be used in more elaborate desserts. It can be combined with ice cream, bread or baked goods to add sweetness and appeal to the dessert. Unlike ice cream, Sorbet is usually served at a very cold temperature to preserve its smooth texture.

What is Sorbet?

Where did Sorbet originate?

Sorbet is believed to have originated in ancient China, with three ingredients: fruit, honey and ice. In the 1st century, Sorbet was introduced to Rome and became popular among the aristocracy. The Roman emperor Nero is believed to have been a fan of Sorbet and often enjoyed this dessert at banquets. From there, Sorbet spread throughout Europe and became a popular treat in different cultures.

However, not every country calls this dessert Sorbet. For example, in Spain and Portugal, it is called "sorvete", while in Italy it is known as "sorbetto". In French, Sorbet is called “sorbet”, but it may differ from traditional American and British Sorbet.

Characteristics of Sorbet

Sorbet has the following characteristics:

- Ingredients: Sorbet consists only of fruit, sugar and water. Its ingredients contain no milk, cream or fat, so it is considered a healthy option and is suitable for vegetarians.

- Texture: Sorbet has a smooth, lighter texture than conventional ice cream. Removing milk and fat from the ingredients gives Sorbet a light texture that melts easily in the mouth. This also makes it a popular choice for people who want to lose weight or maintain a healthy diet.

- Flavour: Using fresh fruit to make Sorbet gives it a pure flavour and helps retain the fruit's full taste, while also enhancing the dessert's aroma.

- Temperature: Sorbet is usually served cold. This helps it retain its soft, smooth texture and makes it especially refreshing on hot days.

How is Sorbet made?

Making Sorbet is quite simple, using the following ingredients: fruit, sugar and water. The fruit can be used fresh or frozen, sugar is added to create sweetness, and a little water is added to make the mixture more liquid.

The method for making Sorbet is as follows:

- Put the fruit, sugar and water into a blender and blend until smooth.

- Then pour the mixture into an ice cream mould and seal it tightly.

- Place the mould in the freezer and leave it for around 4 - 6 hours or until the Sorbet is completely frozen.

What is the difference between Sherbet and Sorbet?

Many people may confuse Sorbet with Sherbet. Although both share the same foundation, with fruit as the main ingredient, this is in fact their only similarity. They also have several differences as follows:

- Ingredients: Sherbet usually contains milk or cream, whereas Sorbet contains only fruit, sugar and water.

- Texture: Sherbet has a thicker texture and contains more fat than Sorbet.

- Ingredients: Sherbet usually contains milk or cream, whereas Sorbet contains neither.

- Texture: Sherbet has a thicker texture and contains more fat than Sorbet.

- Flavour: Sherbet may contain added fruit flavours, but it can also come in flavours such as chocolate or vanilla. Sorbet, on the other hand, only has fruit flavours, as it is made exclusively with fresh fruit.

- Temperature: Sherbet is usually served at a colder temperature than Sorbet. However, it is not served too cold, to prevent it from freezing solid.

Distinguishing Gelato from Sorbet

In addition to Sherbet, Gelato is another frozen dessert that many people mistake for Sorbet. In reality, however, the two types of dessert also have many differences:

- Main ingredients: Sorbet contains only sugar, frozen fruit and water. Gelato, on the other hand, mainly contains milk, sugar and egg yolk. In addition to fruit flavours, Gelato can also contain flavours such as chocolate and vanilla, or other ingredients, to create a variety of flavours.

- Texture: Sorbet has a light, soft and smooth texture, while Gelato is denser and chewier.

- Production method: Sorbet is made by blending frozen fruit with sugar and water, then freezing it. Every hour, take it out and mix thoroughly; repeat this process about 4 times. Sherbet, on the other hand, is made by limiting the amount of air that enters it, then chilling it and stirring it in a circular motion.

- Weight: Gelato has a thick, dense texture because air is kept to a minimum, while Sorbet has a lighter, more aerated texture; clearly, Gelato weighs more.
